It shapes what you expect, sets the context for tasting, and accounts for most of what we call “flavor.” Understanding how to evaluate aroma – and what you are actually smelling – makes every other part of coffee tasting more useful.

Origin and Variety Identification Experienced tasters use aroma to identify where a coffee comes from and how it was processed. Certain regions, varieties, and processing methods produce recognizable aromatic signatures. Ethiopian naturals often carry berry and floral notes. Washed Central American coffees often lean toward clean stone fruit and nuts. Aroma is one of the main tools for making these distinctions.

Sensory Evaluation In formal cupping protocols, aroma is evaluated as a distinct scoring category. It is assessed at multiple points – dry, wet, and during tasting – and scored based on intensity, quality, and complexity. A coffee with flat or defective aroma will score poorly regardless of how it tastes.

Types of Coffee Aroma

Aroma

Aroma refers to what is released once water contacts the grounds. Understanding Retronasal Aroma

Retronasal perception is what happens when aromas travel from the back of the mouth up to the olfactory receptors in the nasal cavity while you drink. Because these aromas combine with taste sensations on the tongue, the resulting perception is much richer than smelling alone.

This is why coffee often seems to have more flavor when you are actually drinking it than when you are simply smelling it from a distance. The retronasal channel adds a layer of aromatic information that blends directly with taste.

In cupping, tasting notes – the descriptors written after drinking the coffee – are largely retronasal impressions. When a taster writes “dark cherry, cocoa, and brown sugar,” most of that comes from aromas perceived retronasally during and after swallowing. This is why training the nose and training the palate are equally important in coffee evaluation.

How Coffee Professionals Evaluate Aroma

  1. Smelling Dry Grounds: Before water is added, tasters smell the dry grounds in each cupping bowl. The coffee should be freshly ground. At this stage, evaluators note the intensity and character of the fragrance.
  2. Evaluating Fragrance: Tasters identify the aromatic notes present in the dry grounds – whether floral, fruity, nutty, chocolatey, or otherwise. They note whether the fragrance is clean, complex, or flat.
  3. Adding Water: Hot water (around 93-96°C) is poured over the grounds, and the bowls are left undisturbed for around four minutes. A crust of grounds forms on the surface.
  4. Breaking the Crust: Tasters use a spoon to break the crust, pushing the grounds toward the back of the bowl. This releases a concentrated burst of aroma. Evaluators lean over the bowl and smell immediately, as the aromatic release is brief and intense.
  5. Evaluating Wet Aroma: After breaking the crust, tasters assess the wet aroma. This stage usually reveals more than fragrance alone – brighter, more developed, and sometimes quite different from what the dry grounds suggested.
  6. Tasting the Coffee: Using a spoon, tasters aspirate the coffee sharply (drawing it into the mouth with a strong slurping motion). This spreads the coffee across the palate and sends aromas through the retronasal pathway.

Aroma Evaluation During Coffee Cupping

Dry Fragrance Evaluation

The first aroma evaluation happens before water touches the coffee. Grounds should be freshly ground and evaluated within a few minutes of grinding. At this stage, tasters are looking for the initial character of the coffee and any early signs of defects.

Breaking the Crust

Breaking the crust is the most aromatic moment in a cupping session. The brief release of concentrated wet aroma gives a strong impression of the coffee’s character. Many experienced tasters consider this the most informative single moment in the cupping process.

Wet Aroma Evaluation

After the crust is broken and the grounds are removed or pushed aside, tasters continue evaluating the aroma from the wet surface of the liquid. The character of the aroma shifts as the coffee cools, and intensity generally decreases over time.

Aroma Changes During Cooling

Coffee is most aromatic when hot. As the temperature drops, some volatile compounds dissipate, and the aromatic impression becomes quieter. However, certain delicate notes – particularly floral and fruit characteristics – can become more defined as the coffee cools. Many tasters prefer to evaluate aroma across a range of temperatures rather than only when hot.

Coffee Variety

Processing Method

Roast Level

Freshness

The most direct way to build an aroma library is to pay attention to what you smell in everyday foods and drinks. Smelling them deliberately and naming what you detect builds the sensory memory that makes aroma identification easier.

Using Reference Ingredients

When tasting coffee, keep reference ingredients nearby. If a coffee seems to have a stone fruit note, smell a fresh peach or apricot alongside it. Direct comparison makes abstract descriptors more concrete and builds stronger sensory associations.

Comparing Coffees Side by Side

Tasting one coffee in isolation gives limited information. Comparing two or three coffees with different origins or roast levels side by side makes differences in aroma much more apparent. Contrasts reveal characteristics that are harder to notice in isolation.

Aroma Evaluation vs. Personal Preference

Identifying an aroma and deciding whether you like it are two different things. Aroma evaluation in a cupping context is about accurate observation – detecting what is present, describing it clearly, and noting its intensity and quality.

A taster might accurately identify a naturally processed Ethiopian coffee as having strong berry and wine-like ferment notes while personally preferring cleaner, more restrained profiles. Both the observation and the preference are valid, but they are separate things. Good sensory evaluation means noting what is present without letting personal taste bias the description.

There is also natural variation in how people perceive aromas. Genetic differences in olfactory receptors mean that some compounds are more or less detectable for certain individuals. One taster might easily detect jasmine in a light roast; another might find it elusive. This does not mean either taster is wrong – it is one reason consistent language and reference points are important in shared evaluation settings.

The goal of aroma evaluation is an accurate description, not a consensus on what is enjoyable. Both skills – identifying aromas and forming preferences – are worth developing, but in sensory evaluation they are kept separate.
