Step-by-Step Coffee Cupping Process
- Prepare samples. Set out one cupping bowl per coffee. Label each bowl clearly. Place the same number of bowls for each sample if running duplicates – typically two or three bowls per coffee helps confirm what you detect.
- Grind coffee. Grind each sample directly into its bowl immediately before cupping. Purge the grinder between samples to avoid cross-contamination. Use the same grind setting and dose weight for all samples.
- Evaluate dry fragrance. Before adding water, lean over each bowl and smell the dry grounds. Note any aromas – floral, fruity, nutty, earthy, or other characteristics. This is the dry fragrance stage.
- Add water. Pour water at the correct temperature in a steady, even stream over the grounds in each bowl. Fill to the intended volume. Start a timer as you pour the first bowl.
- Allow steeping. Leave the bowls undisturbed for four minutes. The grounds will rise to the surface and form a crust. Do not stir or disturb the bowls during this time.
- Break the crust. After four minutes, use a cupping spoon to break the crust on each bowl with three gentle forward pushes. Lean in as you break each crust and evaluate the wet aroma released. This is one of the most aromatic moments in the session.
- Evaluate aroma. As you break each crust, note the aromas immediately. Intensity, character, and any off-notes are all relevant. Work through each bowl in order.
