A coffee varietal is a distinct genetic subtype within a coffee species – most commonly within Arabica – with specific plant characteristics, growing behaviour, and flavor tendencies. Varietals are to coffee what grape varieties are to wine: different plants that produce different fruit, with different qualities in the cup, even when grown in the same region.
Varietal matters in coffee production for practical and sensory reasons. On the farm, varietal affects yield, disease resistance, altitude tolerance, and how the plant responds to its environment. In the cup, it influences acidity, sweetness, body, aroma, and the overall complexity of the flavor profile. A Bourbon and a Geisha from the same farm, processed the same way, will taste different – the varietal itself contributes to those differences.

What Is a Coffee Varietal?
Species vs Varietals
Coffee is a plant genus – Coffea – that contains dozens of species. The two species commercially relevant to most coffee are Arabica (Coffea arabica) and Robusta (Coffea canephora). Within each species, there are many distinct genetic subtypes. In Arabica, these subtypes – called varietals or cultivars – are the result of natural mutations, geographical isolation, selective breeding, or deliberate hybridisation over centuries. When coffee producers or roasters mention the varietal on a bag, they are identifying which Arabica subtype the coffee comes from.
Genetic Differences
Each varietal has a distinct genetic makeup that determines how the plant grows, how it produces fruit, and what compounds develop in the seed. These genetic differences translate into differences in bean size, density, the composition of sugars and acids in the seed, and the precursors to flavor compounds that develop during roasting. SL28

SL28 is drought-tolerant but susceptible to coffee leaf rust. SL34
SL34 is another Scott Laboratories selection, developed from a different Kenyan source than SL28. Geisha (Gesha)
Geisha originated in the Gesha region of Ethiopia and was brought to Central America via research stations in the mid-20th century, where it remained relatively obscure for decades. It came to widespread attention after an exceptional lot from Hacienda La Esmeralda in Panama won the 2004 Best of Panama competition with an unprecedented score and price. Since then, Geisha has become the most commercially prominent varietal in specialty coffee, associated with distinctive floral, jasmine, tea-like, and tropical fruit characteristics. It is a low-yielding, disease-susceptible plant that requires careful cultivation, which contributes to its high cost. Castillo

It was created by crossing Caturra with a Robusta-derived rust-resistant plant (Híbrido de Timor), then back-crossing with Caturra to recover cup quality. Pacamara
Pacamara is a hybrid of Pacas (a Bourbon mutation from El Salvador) and Maragogipe (a Typica mutation known for very large beans). Washed Processing
Washed processing tends to produce the most transparent expression of varietal character, because the quick removal of the fruit leaves the intrinsic qualities of the bean – shaped by genetics, altitude, and soil – less obscured by fruit-contact flavors. A washed SL28 from Kenya expresses the varietal’s acidity and complexity more directly than the same varietal processed as a natural. This is one reason washed processing is often preferred when the goal is to showcase varietal and terroir character.
Natural Processing
Natural processing adds a significant layer of fruit-derived flavor on top of the varietal character. This can be complementary – natural Geisha can produce extraordinarily complex cups that combine varietal florality with fruit-processing sweetness – or it can mask more subtle varietal differences. In some cases, the processing influence is strong enough that varietal becomes secondary in determining the cup profile.
Honey Processing
Honey processing sits between the two, adding sweetness and moderate body while retaining more varietal character than full natural processing. Latin America
Latin American coffee production spans a wide range of varietals. Kenya is defined by SL28 and SL34, with Ruiru 11 and Batian (newer rust-resistant hybrids) increasingly present. Rwanda and Burundi primarily grow Bourbon.
Asia-Pacific
Indonesia grows a mix of Typica-derived varieties and Catimor hybrids, with wet-hulled processing dominating and tending to reduce varietal distinction in the cup. Growing Region

Roasting
Roast level and approach significantly shape what is perceptible in the cup. A light roast will express more of the varietal and origin character preserved in the green bean. A dark roast suppresses these nuances and replaces them with roast-derived flavors. The subtlety of varietal difference is most perceptible at lighter roast levels; at dark roast levels, varietal becomes much harder to distinguish.
Brewing Method
